The Kaikan Fizz, hailing from Tōkyō Kaikan, is a stately yet nostalgic cocktail that closely resembles the sweet yogurt drink known as Calpis. In a time when dairy was a luxury in Japan, American influence brought rare ingredients such as milk to the bar, making this unique cocktail possible. Combining gin with the brightness of lemon and sweetness of sugar, topped with milk and finished with club soda, the Kaikan Fizz delivers a memorable taste experience. 


Ingredients

  • 45 ml of gin
  • 15 ml of lemon juice
  • 1 teaspoon of sugar
  • 30 ml of milk
  • Club soda (to top)

Preparation steps

  1. Vigorously shake the gin, lemon juice, sugar, and milk with ice in a shaker to prevent the milk from curdling.
  2. Pour into a highball glass filled with fresh ice.
  3. Fill the glass to the brim with more ice.
  4. Top the mixture with club soda, pouring it gently over the back of a barspoon into the glass.
