Pineapple-Jalapeño Tequila Cocktail

Ingredients

  • 10 cilantro leaves
  • 4 (1-inch) chunks of fresh pineapple
  • 2 (¼-inch) wheels of fresh jalapeño, or 3 for a spicier drink
  • ¾ ounce of simple syrup
  • 2 ounces of blanco tequila (I recommend Don Julio Blanco)
  • ¾ ounce of lime juice

Preparation steps

  1. In the bottom of a shaker, muddle the cilantro, pineapple, and jalapeño with the simple syrup.
  2. Add the tequila and lime juice.
  3. Shake with ice until chilled.
  4. Double-strain through a fine-mesh sieve into a double rocks glass filled with ice.
  5. To garnish, cut a slit through the bottom of a pineapple wedge and place it on the rim of the glass.
